WHAT YOU NEED:
100 g quinoa
100 g cherry tomatoes
1 small red onion
about half of a fresh cucumber
50 g arugula
80 g feta cheese
salad dressing with hemp seed oil (you can refer to another recipe for this)peeled hemp seeds
roasted pumpkin seeds
PREPARATION:
Place the quinoa in a sieve, rinse it with cold water and then boil it. Allow the quinoa to cool before serving. Chop the onion, cucumber, halve the tomatoes and dice the feta cheese. Roast the pumpkin seeds. Place the ingredients on the plates in layers, starting with arugula. Drizzle some salad dressing on top, garnish with peeled hemp seeds and roasted pumpkin seeds.
